The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

Aged 72 months on lees, fermented in barrel with full malo, the NV Champagne Grand Cru Blanc de Noirs Les Crayeres Vieilles Vignes Brut is just a heavenly bottle, offering a kaleidoscope-like nose of buttered citrus, orange blossom, flowers, green almonds, and salty minerality. These flow to a full-bodied, rich, deep, and incredibly layered palate Champagne that flirts with perfection. It’s stunning today yet it should easily evolve for another 20 years.

Year after year, Egly's NV Blanc de Noirs Grand Cru Les Crayeres remains one of the most compelling and reliable wines from the Montagne de Reims. The wine ascends from the glass with a bouquet of remarkable complexity—aromas of acacia, ripe pear, orange zest, toasted nuts and patisserie elements unfurl. Full-bodied, concentrated and layered, with ample chalky structuring extract and mouthwatering acidity, it concludes with a long, saline finish. While I often vacillate between Les Crayeres and the Millésime as to which I favor, this year, Les Crayeres stands as the most captivating wine in the cellar. It offers immense youthful appeal yet promises to evolve beautifully with age. Readers would be wise not to hesitate—it fully lives up to its reputation, and I'd gladly secure bottles for my own cellar.

The NV (2018) Extra-Brut Blanc de Noirs Les Crayères is 100% Pinot Noir from the Crayères lieu-dit in Ambonnay. Soaring aromatics make a strong first statement. Rich, deep and layered, the Crayères offers a striking mix of heady Pinot fruit intermingled with scents of chalk, white pepper, dried herbs and oyster shell. A touch of barrel sweetness frames the finish. What a stunner. Quintessential Egly-Ouriet. Dosage is 1 gram per liter. Disgorged: July 2025.

There’s a sleek, fine china–like feel to the acidity, which provides crisp definition to the layers of flavor; rich notes of cassis, plump golden raisin and whole-grain toast support accents of walnut skin, chamomile, lemon oil and honeycomb.
