Savart’s 2020 Écueil Les Noues, disgorged in November 2024 with a dosage of 3.5 grams per liter, comes from a 0.43-hectare south-facing lieu-dit of 20-year-old vines, but despite the relatively young age of vines, it delivers a highly aromatic and concentrated wine. Frédéric Savart explains that these vines tend to produce small Pinot Noir grapes with a high solids-to-juice ratio. Vinified in 500-liter barrels, 40% of which were new, it bursts from the glass with a deep bouquet of rose petals, brown sugar and red berries. On the palate, it is medium- to full-bodied, ample and multidimensional, with intense aromatics and vibrant acidity, culminating in a long, perfumed finish. While the 2019 rendition appears notably precocious, the 2020 is warmly recommended.

The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.
