Cabernet Sauvignon

By far and away the most recognized and widely grown red wine grape varietal in the world is the Cabernet Sauvignon. First cultivated in the 18th century in France, this wonderful cross of Cabernet Franc and Sauvignon Blanc grapes has long since been the most important varietal for red wines across the globe. Now grown everywhere from its native France to the furthest reaches of the New World, Cabernet Sauvignon is adored and prized by wineries for its hardiness and resistance to rot, as well as its large and sharp flavors and wonderful capability for fine aging Indeed, many of the finest wines of history and the modern age would be simply unimaginable without Cabernet Sauvignon grapes, with the famed wineries of Bordeaux and other important regions using it as the primary grape in their oak aged produce. High tannin levels, acidity and powerful flavors are the characteristics most commonly associated with this varietal, however, when blended and slowly aged, it is capable of a world of flavors and aromas unmatched by any other grape.

Australia

Whilst most of Australia consists of arid deserts and dense bushland, the oceanic coasts to the south of the country have a terrain and climate ideal for vine cultivation and wine production. It took several decades of failed attempts at the end of the 18th century in order to produce vines of a decent enough quality for making wine, but since those first false starts, the Australian wine industry has continued to grow and grow. Today, wine production makes up for a considerable part of the Australian economy, with exports in recent years reaching unprecedented levels and even overtaking France for the first time ever. Whilst the greatest successes in regards to quality have been the result of the Syrah grape varietal (known locally as Shiraz), Australia utilizes several Old World grapes, and has had fantastic results from Cabernet Sauvignon, Merlot, Riesling, Chardonnay and more. As the Australian passion for locally produced wine continues to develop, wineries have begun experimenting with a wider range of grape varietals, meaning that nowadays it isn't uncommon to find high quality Australian wines made from Petit Verdot, Sangiovese, Tempranillo and Viognier, amongst many others.

Barossa

The Barossa Valley in Australia is one of the New World's most interesting wine regions, having been established in the late 19th century by German settlers. The region benefits enormously from the relatively temperate climate, which ranges from being hot on the lower parts of the valley, to quite cool as the altitude increases on the valley slopes. Barossa Valley produces mostly Shiraz wines, and has become one of the key Australian regions for this distinctive grape varietal which has gone on to be a major grape for the Australian wine industry. Despite suffering from a poor reputation in the mid 20th century, by the 1980s, plenty of unique and forward-thinking wineries set up in Barossa to take advantage of its excellent climate, and set about producing the excellent red and white wines which the region is famed for today.

Juicy blackcurrants to the fore on the deep palate, mingling with fleshier mulberry, dried mint, earth and compost nuances along with an amplified floral accent – heady lilacs versus the violets of 2015. Powdery, mouthcoating tannins and ripe, redcurrant acidity underpin the long, mineral wet-stone finish. This marathon runner wears its plush fruit and firm structure lightly. Released at £112.99. The family's flagship Cabernet is the 2016 Cyril Henschke Cabernet Sauvignon. As usual, the oak regime incorporates a reasonable 20% new French hogsheads, lending a discreet edge of pencil shavings to the scents of pipe tobacco, menthol and cassis. It's medium to full-bodied but exquisitely balanced so as to appear nearly weightless on the palate, buoyed by ripe, plush tannins that turn softly dusty on the lingering finish. It's another excellent vintage for what is arguably Eden Valley's top Cabernet Sauvignon.

Aromas of coal smoke, dried sage and thyme, as well as iodine, Indian ink, licorice and wet slate make for a very savory frame to the violets, blueberries and blackcurrants. The palate has a striking degree of power and purity with some quite ripe, concentrated dark-plum and mulberry flavors, stretched long on majestic cabernet tannins. The dark berries hold long and stay fresh to the very end. Some blueberries to close. This is an elegant, complex and powerful rendition of higher-altitude cabernet style. This vintage offers all the finesse and distinctive character for which this historic family estate is famed. The nose is plush, with a backbone of eucalyptus, warm stone and scrubby South Aussie bush. The palate flows similarly, wound by chiseled yet fine tannins, expertly balanced by juicy fruit and bright acidity. Drink now–2031.

Winery Notes

Deep crimson in color. Spicy and perfumed aromas of red and blackcurrant, mulberry and cassis, with nuances of violet and dried herbs, forest moss and hints of cigar box and cedar. Concentrated flavours of black and blue berry fruits, ripe mulberry and blackcurrant are complemented by rich cedar and mocha, while balanced acidity and finely structured tannins provide focus and depth, for a beautiful, lingering finish.
