Cabernet Sauvignon

By far and away the most recognized and widely grown red wine grape varietal in the world is the Cabernet Sauvignon. First cultivated in the 18th century in France, this wonderful cross of Cabernet Franc and Sauvignon Blanc grapes has long since been the most important varietal for red wines across the globe. Now grown everywhere from its native France to the furthest reaches of the New World, Cabernet Sauvignon is adored and prized by wineries for its hardiness and resistance to rot, as well as its large and sharp flavors and wonderful capability for fine aging Indeed, many of the finest wines of history and the modern age would be simply unimaginable without Cabernet Sauvignon grapes, with the famed wineries of Bordeaux and other important regions using it as the primary grape in their oak aged produce. High tannin levels, acidity and powerful flavors are the characteristics most commonly associated with this varietal, however, when blended and slowly aged, it is capable of a world of flavors and aromas unmatched by any other grape.

Australia

Whilst most of Australia consists of arid deserts and dense bushland, the oceanic coasts to the south of the country have a terrain and climate ideal for vine cultivation and wine production. It took several decades of failed attempts at the end of the 18th century in order to produce vines of a decent enough quality for making wine, but since those first false starts, the Australian wine industry has continued to grow and grow. Today, wine production makes up for a considerable part of the Australian economy, with exports in recent years reaching unprecedented levels and even overtaking France for the first time ever. Whilst the greatest successes in regards to quality have been the result of the Syrah grape varietal (known locally as Shiraz), Australia utilizes several Old World grapes, and has had fantastic results from Cabernet Sauvignon, Merlot, Riesling, Chardonnay and more. As the Australian passion for locally produced wine continues to develop, wineries have begun experimenting with a wider range of grape varietals, meaning that nowadays it isn't uncommon to find high quality Australian wines made from Petit Verdot, Sangiovese, Tempranillo and Viognier, amongst many others.

Barossa

The Barossa Valley in Australia is one of the New World's most interesting wine regions, having been established in the late 19th century by German settlers. The region benefits enormously from the relatively temperate climate, which ranges from being hot on the lower parts of the valley, to quite cool as the altitude increases on the valley slopes. Barossa Valley produces mostly Shiraz wines, and has become one of the key Australian regions for this distinctive grape varietal which has gone on to be a major grape for the Australian wine industry. Despite suffering from a poor reputation in the mid 20th century, by the 1980s, plenty of unique and forward-thinking wineries set up in Barossa to take advantage of its excellent climate, and set about producing the excellent red and white wines which the region is famed for today.

From a cool, north-facing vineyard at 470m first planted in 1969 by Johann Henschke's grandfather Cyril then replanted in 1998 by his parents. The vineyard makeup, which includes Cabernet Franc and some Merlot, means there's the potential to make a classic Left Bank Bordeaux, but exceptional quality of Cabernet Sauvignon in 2021 – fully ripe and beautifully expressive – warranted its 99% inclusion. The 1% Merlot, Johann explains, adds a plushness that you'd notice if it wasn't there. Vibrant, inky blackcurrant, black cherry and sloes, with a lifted menthol note of dried sage and mint. Complex and elegant but so approachable thanks to that pleasurable softness, yet still with the structure from fine tannins and bright acidity to see it continue to hold shape and balance for decades yet.

The 2021 Cyril Henschke Cabernet Sauvignon hails from a block planted in the 1960s and the 1980s. The vineyard is planted east-west, with vertical shoot positioned trellising, and the straw mulch underneath the vines assists in bringing out the most expression possible. Fermentation involves very gentle cap management to withdraw gentle tannins from the wine. It matured for 18 months in French oak. The nose leads with violets and crushed rocks, dried herbs and ancient, dusty earth. With 1% Merlot, this is essentially a Cabernet Sauvignon wine. The wine takes me to the ancient gums and rocky outcrops of the Eden valley, a place I am incredibly fond of. This is the loveliest Cyril Henschke Cabernet Sauvignon I can recall—sleek and evocative. 14.5% alcohol, sealed under screw cap.

Dense and toothsome, but there's a wonderful sense of polish to the dark and concentrated flavors. Offers chai tea, cardamom, blackberry preserves and spiced plum, along with loamy, earthy details, plus white pepper accents. Shows a juicy pop of fresh black cherry juice and a lingering note of dried violet on the finish. Drink now through 2039. 50 cases imported.
