Derived principally from the 2021 vintage vinified in tank and complemented by 28% of the 2020 harvest matured in oak, the latest release of the NV Blanc de Blancs Le Cotet originates from the lower-lying, chalkier sector of the vineyard in front of Lassaigne’s winery, where scarcely 15 centimeters of topsoil overlay the bedrock. True to style, it also incorporates approximately 10% of already-bottled Champagnes that have been disgorged and reintegrated into tank. Disgorged à la volée in July 2025, it bursts from the glass with scents of nashi pear, lemon oil and green apple, mingling with pastry nuances and framed by youthful reduction. On the palate, it is medium-bodied, incisive and precise, with a crystalline core of fruit and ample extract, underpinned by mouthwatering acidity and culminating in a long, saline finish.

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

This sleek Champagne is tightly-meshed, offering mouthwatering acidity and a fine, persistent bead. Shows rich notes of crushed almond and salted butter along with flavors of steeped raspberry, dried white cherry, orange peel and thyme. Minerally finish. Drink now through 2026.

Winery Notes

This cuvée comes from a single vineyard called “Le Cotet”. Here, the 40+ year-old vines are deeply rooted in the chalky hillside, at the furthest eastern part of the Montgueux vineyards. A mineral wine, very fresh, that exhibits lemony notes on the finish. Pairing: A wonderful match to oysters, seafood and shellfish.
