#14 Top 20, 2019. Mizunara oak is the modern signature of Japanese whisky, and Kaiyo- whisky enables inquisitive imbibers to savor the spice, incense, and sandalwood flavors of this rare wood for an attractive price. Distilled and matured in Japan, the casks then undergo a three-month ocean voyage from Osaka to Liverpool before bottling to encourage further flavorsome interactions. Ground spices, vanilla sponge cake, honey, brown sugar cubes, and scents of aromatic woods and incense. Pastry, egg custard, and allspice flavors, followed by a wave of vanilla creaminess and a lengthy finish with fading spices. – Winter 2019

Japan

All over Japan, farmers and wine producers take the production of alcoholic beverages including plum wine and sake very seriously. It is an industry which dates back well over a thousand years, and is held in high esteem in this far east country, where plum wines and sake often accompany meals and are used for ceremonial purposes. Whilst plum wine is produced in a relatively similar way to grape based wines, sake requires a complex process more akin to the brewing of beer, except using a rice mash instead of other grains. The rising popularity of both of these drinks in the west has seen the drinks industry in Japan increase dramatically over recent years, and both quality and quantity has risen alongside demand, and is expected to rise further.

Winery Notes

Kaiyo whisky is matured in the finest Japanese Mizunara oak casks. These casks are handmade due to Mizunara oak’s delicate wood grain. They are among the rarest casks in the world and are considered the finest in which to mature whisky. After years of maturing our casks go on a final maturation at sea voyage for up to 3 months, leaving from Osaka Japan.
