The purity and intensity are very impressive, with strawberry, lemon rind, iron, clove and rose leaf aromas and flavors. Medium- to full-bodied. The tight phenolics gives this a firm mouthfeel and notes of orange peel and stones. Based on 2022. A blend of 80% pinot noir and 20% chardonnay. 36 months on the lees. 3 g/L dosage. Drink or hold.

The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

Lovely aromas of deep roasted apricot and brown pastry, there's lots of maturity here with notes of dried pears, Seville orange and buttered toast. It's very expressive, with lots of bitter orange, and the palate is big, bright and detailed. There's a pleasant bitterness on the long finish, with lots of white pepper and a sunny Chardonnay character in there. Spicy stuff.

Disgorged in December 2025 with a dosage of three grams per liter, Paillard's NV Bouzy Grand Cru Les Parcelles XXII is based on the 2022 vintage and, as ever, is a blend of 80% Pinot Noir and 20% Chardonnay sourced from the sun-kissed, south-facing slopes of Bouzy. The wine opens with a flamboyant bouquet, bursting from the glass with aromas of red cherry, orange oil and apricot, mingled with notes of buttery pastry and lychee. Medium- to full-bodied, enveloping and rich yet vibrant, it is built around a fleshy core of fruit and succulent acids, concluding with an expansive finish.
