By far and away the most recognized and widely grown red wine grape varietal in the world is the Cabernet Sauvignon. First cultivated in the 18th century in France, this wonderful cross of Cabernet Franc and Sauvignon Blanc grapes has long since been the most important varietal for red wines across the globe. Now grown everywhere from its native France to the furthest reaches of the New World, Cabernet Sauvignon is adored and prized by wineries for its hardiness and resistance to rot, as well as its large and sharp flavors and wonderful capability for fine aging Indeed, many of the finest wines of history and the modern age would be simply unimaginable without Cabernet Sauvignon grapes, with the famed wineries of Bordeaux and other important regions using it as the primary grape in their oak aged produce. High tannin levels, acidity and powerful flavors are the characteristics most commonly associated with this varietal, however, when blended and slowly aged, it is capable of a world of flavors and aromas unmatched by any other grape.

Vertical and imposing, the 2021 captures all the brooding power of To Kalon in the more restrained style that is typical of Realm today. Crème de cassis, leather, lavender, mint and spice linger on the polished close. This is the first vintage that includes a touch of Cabernet Franc that was previously bottled separately and that adds a distinct floral/saline quality that is especially evident in the finish.

The 2021 Beckstoffer To Kalon Vineyard Cabernet Sauvignon has 5% Cabernet Franc in the blend. Deep garnet-purple in color, it explodes with a mushroom cloud of plum preserves, boysenberries, and creme de cassis with an undercurrent of Chinese five spice, cast-iron pan, and aniseed plus a waft of dusty soil. The full-bodied palate is rich and seductive, with firm, grainy tannins and plenty of freshness to support the generous black fruit layers, finishing long and spicy.

Realm's 2021 Cabernet Sauvignon Beckstoffer To Kalon Vineyard—a blend of 95% Cabernet Sauvignon and 5% Cabernet Franc—features knockout aromas of black cherries, loamy earth and dried spices that suggest cinnamon and cardamom. It's full-bodied, velvety and richly concentrated, with a long finish that's softly tannic, even a touch dusty. While far from being unapproachable, it should be even better in a decade or so.
