The Sarris 2025 Robola of Kefalonia shows delicate aromas of honeysuckle layered over pear and Golden Delicious apple. Those orchard-fruit notes give the wine a pithy richness, while a subtle cinnamon-like spice emerges naturally from the fruit, as the wine is made entirely in stainless steel. Wild fermented over two weeks and aged for six months on its fine lees, the wine balances texture with mild freshness. The fruit comes from terraced limestone vineyards planted to 15- to 35-year-old bush vines at elevations ranging from 350 to 700 meters above sea level, underscoring the variety’s strong connection to Kefalonia’s mountainous landscape. Production totals 20,000 bottles.
