The 2025 Rosé Cistercien, a blend of Zweigelt, St. Laurent and Pinot Noir, is an explosively textural wine that has undergone some secondary fermentation in bottle. That said, it’s a very fun, wild ride. Spritzy, mousse-like bubbles carry a raging river of fresh wild strawberry, limestone-like mineral cut and deep, orange-peel-like pithiness. This is so chiseled, not to mention utterly distinctive and super refreshing. What an interesting, joyful quaff.
