Long Term Pre-arrival Definition: Ordering wine directly through us from our supplier partners in Europe in advance of the item’s physical arrival in the US.

Long Term Pre-arrival  sales ensure you’re getting the best possible price and that you have also secured the product before it hits the normal retail supply chain. The lead time for Pre-arrival goods is generally 4–8 months, sometimes longer based on supply chain and the logistics of transporting goods overseas. The expectation, from our team, is to communicate to the customer the location of their purchase every step of the way.

This product is offered as a full case purchase option, minimum order quantities may be applicable. When available, multiple case options will be presented. If you are purchasing a Pre-Arrival item you must order a solid case.

Rapid Ship

Items listed as "rapid ship" are in stock and available for immediate pickup or shipment. Those that do not have the "rapid ship" icon are housed with our supplier and must be transferred to our warehouse before they can be picked up or shipped. This requires 4-6 business days but usually occurs sooner. Some products will list both options of availability as there will be a certain number in stock, with the option to order additional bottles to be transferred from the supplier.

Pox (pronounced “p?sh”) is an ancient beverage of the Mayan culture in Chiapas, produced from grain and sugarcane. In the Mayan language, Pox means “medicine” or “healing”, and the spirit is still used in ceremony and ritual today. Siglo Cero was created as a brand to help preserve this Mayan history, and to share it with the outside world.

Siglo Cero was created in collaboration with the indigenous Mayan community in Chiapas and has a deep commitment to preserving the heritage it represents. All the corn used is sustainably grown by Mayan farmers, with a mission to preserve the heritage strains of corn endemic to the area. The sugarcane and wheat, likewise, are locally and sustainably sourced. Siglo Cero also donates a portion of each sale to the ALSOL Foundation, a group dedicated to helping Mexican artists and craftspeople in Chiapas.
First, sugarcane is crushed, juiced and boiled to create piloncillo (like a sticky brick of raw brown sugar). Meanwhile, four different heritage varieties of corn (white, red, yellow and black) are dried, husked and ground. Next, wheat bran is placed in a large wooden fermenter, and local spring water is slowly introduced. Finally, the ground corn, piloncillo and additional fresh sugarcane juice are added to the vat, where natural, spontaneous fermentation occurs over 10-18 days. The mash is distilled twice, using wood-fired copper pot stills, and proofed to around 42% ABV (proof will vary slightly from batch to batch). The final result is savory on the nose and palate with notes of ancho and guajillo chiles, esquites, dried coconut, and baked corn husk. A fascinating experience!
