Certified Organic. Dancer has only 0.29-hectares of this great terroir. Drawn from vines planted mostly in 1963 (but also a parcel planted in the late 1970’s, right next door to Jean-Marc Roulot’s vines). Native yeast fermentation with no additions, natural malo, and no battonage. Aged in approx. 50% new oak for 17 month. After assemblage the wine is racked back into stainless steel to age for an additional 5-6 months before bottling. Bottled with no fining or filtration. This wine is classic Perrières with deep texture shot through with chalky, racy mineral notes.

Of all the white wine grape varietals, surely the one that has spread the furthest and is most widely appreciated is Chardonnay. Most fine Chardonnay wines use a process known as malolactic fermentation, wherein the malic acids in the grape juice are converted to lactic acids, allowing a creamier, buttery nature to come forward in the wine. No grape varietal is better suited to this process than Chardonnay, which manages to balance these silky, creamy notes with fresh white fruit flavors beautifully.
