The palate offers an attractive blend of fruit sweetness and salty minerality, with its dark fruit flavors complicated by subtle soil tones. The tannins are suaver than in recent vintages, which allows the wine's middle palate to convey more early personality. Sieve told me he cut back on his use of whole clusters here in 2016. The estate's vines are on clay-rich soil in what Sieve described as the northern and middle third of the cru.

Varietal: Pinot Noir

Regularly described as being the grape varietal responsible for producing the world's most romantic wines, Pinot Noir has long been associated with elegance and a broad range of flavors The name means 'black pine' in French, and this is due to the fact that the fruit of this particular varietal is especially dark in color, and hangs in a conical shape, like that of a pine cone. However, the superb and mineral rich soils fed by the Rhone river, and the long hot summers and mild autumns of the region produce a wide variety of fine grapes, and as such, Burgundy produces plenty of different wines which are equally as good as the produce the region is famed for. The region of Burgundy itself has a wine-making history which stretches back at least two thousand years, and as such, it comes as no surprise that the wineries which fill the dozens of controlled appellations of the region rely heavily on traditional methods and techniques when it comes to producing their famous wines.
