With piercing aromas of raisin pudding, molasses and spice, this rolls out the welcome mat and more. Luscious is probably as tame as you can put it; this is a ribald sweet wine with acidic backbone and hugely intense flavors of baked brown sugar, cinnamon cake and molasses. Powerful but still racy due to bracing acidity. About as good as it gets with P.X.

As smooth as a nutty caramel candy seasoned with spice, this PX moves slowly through the mouth, leaving a soft, warm memory in its wake. Extremely ripe, this has enough acidity to keep it from being tiring.

An excellent introduction to this extreme category. Intense caramelized-grapefruit character with plenty of toffee aroma. However, for a pedro ximénez, this has a certain lightness of touch and the sweetness is restrained. Long, raisiny but clean finish. Drink now.

Ever since the Phoenicians and Romans brought their knowledge of vine cultivation to Spanish soils, the country's culture has grown alongside wine production, with wine being a vital part of Spanish identity and Spanish traditions.
