85% Trebbiano Spoletino/15% Grechetto. From biodynamically farmed, certified-organic, hand-harvested estate fruit. Fermentation occurs with native yeasts in open-topped tank with no temperature control and no sulfur. The Trebbiano is macerated with the skins for two days; the Grechetto sees no skin contact. The final blend is a combination of free-run and press juice, with a higher proportion of the latter (more free-run is used for a sparkling wine). The wine is aged on its fine lees in stainless steel for several months. It is bottled in the spring after harvest without fining or flitering. Biancofongoli is a zero-sulfur-added wine.

Varietal: Trebbiano

The Trebbiano grape has long been an important grape in its native Italy, where it has been cultivated for wine production for over a thousand years. We know that Trebbiano was first brought to France in the 14th century, and that it proved to be a popular varietal which quickly spread throughout the country and to elsewhere in Europe. Trebbiano is often used for the production of fortified wines, and is commonly used as a blending grape, but there are also many fine single variety wines made from this varietal, which allow the characteristics of the grape to shine. In particular, it is known for a pleasantly high acidity, with flavors of citrus fruits, white flowers and all sorts of mineral notes on the palate.

The small central Italian wine region of Umbria has a wine making history which stretches back over two thousand years, and was considered an important center of viticulture by the Romans, who used the fine soils and excellent climatic conditions in Umbria for the production of their wines. Today, the wine industry in the region remains strong and unique, with the region benefiting enormously from the excellent weather and terroirs which typify the region. Many wineries in Umbria keen to experiment with imported grape varietals, which are often blended and aged with native varietals in order to make highly characterful and delicious wines. In particular, the blended white wines made from Chardonnay and Grechetto grapes are well worth looking out for, as are those made from Sangiovese and imported French varietals.
