We are located here at the top of the hill of Epiré, the highest point of the appellation, at the foot of the Moulin de Beaupréau. We are therefore on a well-ventilated terroir. The subsoil is made up of brittle schist with a vertical counterpart allowing deep rooting. The soil, 30 to 50cm deep, is made up of aeolian sands, sands brought up by the wind at the top of the hillsides. We talk a lot about the schists of Savennières but the influence of the sandy soils is also very important on a lot of the terroir. These sandy and schist soils as well as the proximity of the river, at the foot of the slopes, give the vines a very early ripening period. Ripening progresses very quickly and the skins are quickly refined. On this terroir, we are looking for wines with a fine and airy texture.

Varietal: Chenin Blanc

For centuries, the Chenin Blanc grape has been grown in its native France, and in many other countries around the world (most notably in South Africa). These green skinned grapes are revered for the fact that their high acidity makes them extremely versatile, and Chenin Blanc wines can range from the fascinating, sweet and viscous dessert wines made by allowing noble rot to develop on the fruit, to dry and crisp sparkling crémants, or simple, elegant still white wines. Their key feature is that they are considered to be a highly 'transparent' grape, allowing the features of their terroir to come through in the glass, and the fact that they can carry a beautiful range of tropical fruit flavors such as pineapple, guava and banana.

The Loire Valley in France is home to many of the world's finest examples of white, rosé and sparkling wines, with a wide range of both dry and sweet examples being produced each year to international claim. Whilst Chenin Blanc and Sauvignon Blanc make up for much of the vineyards in the region, certain areas of the Loire Valley also produce superb red wines, such as the Cabernet Franc wines from the Chenin sub-region. This variety and level of excellence has long been admired, with the Loire Valley being highly favored in the middle ages by the crowned heads of Europe, and with a wine-making tradition which stretches back to the first century and perhaps beyond. The region has a wonderful continental climate, where hot summers meet oceanic winds, and excellent rich terroir carried by the river that flows through it.
