This is a deep red burgundy colored wine. The nose is of red fruits like raspberries and wild strawberries. Some hints of blackppeper and cassis can also be found in the wine. The mouth is sweet an filled with red fruit and some spiciness. It is a soft and delicate wine, with good structure and body but soft tannins. Very good balance between fruit and French oak. It is ideal to accompañy red meats and casseroles Blend 100% Cabernet Harvest May, 2019 Bottled January, 2008 Barrel Regime 15 % 6 Mo. Neutral barrel, 85% Stainless Alcohol 13.5% Production 4000 cases Our Cabernet Sauvignon vineyards barely produce 8,000 kilos per hectare, which results in a concentration that is easily seen and tasted in the wine. The grapes are hand-picked in early May and quickly transferred to the winery, where they undergo a rigorous selection process before being destemmed, crushed, and fermented in stainless steel tanks. Fermentation lasts approximately 10 days at 28°C (82°F), and once completed, the wine remains in the tank

Varietal: Cabernet Sauvignon

There is little doubt about the fact that the most familiar red wine grape varietal in the world is the Cabernet Sauvignon grape, seen listed on bottles from more or less every single wine producing country across the globe. Part of the reason for this is the fact that Cabernet Sauvignon is a particularly hardy grape, resistant to both frost and rot, and can grow well in a number of climatic conditions so long as it receives enough sunlight and water. Of course, this is only half the story – we cannot ignore the fact that wines made from the Cabernet Sauvignon varietal are prized not only for their strong acidic fruit flavors, spicy and earthy notes and high tannin content, but also for the fact that they age beautifully in oak, resulting in wines which are on another level from those made from lesser grapes. Aged wines made using primarily Cabernet Sauvignon grapes are widely recognized to be the finest in the world. The aging process rounds out the tannins, softens the acidity and allows a wide range of fascinating and complex flavors and aromas to come through, making them an unquestioned highlight of the red wine world.

Region: Valle Central

The Valle Central of Chile is widely regarded as being one of the oldest 'New World' wine regions of earth, with a history that extends back over five hundred years to the time of the first European settlers in South America. Whilst they were mainly preoccupied with planting vines for the production of sacramental wines, today, the wine industry of Valle Central has never been stronger. With a wide range of vines flourishing in the region, thanks to the many micro-climates the valley provides, wineries can make the most of their particular location and produce fully ripened grapes of exquisite flavour and character. Cabernet Sauvignon, Merlot, Sauvignon Blanc and Carmenere grow very well all throughout the various areas within Valle Central, and the region is developing a serious reputation for excellence on the world stage.

Chile has a long and rich wine history which dates back to the Spanish conquistadors of the 16th century, who were the first to discover that the wonderful climate and fertile soils of this South American country were ideal for vine cultivation. It has only been in the past forty or fifty years, however, that Chile as a modern wine producing nation has really had an impact on the rest of the world. Generally relatively cheap in price,Whilst being widely regarded as definitively 'New World' as a wine producing country, Chile has actually been cultivating grapevines for wine production for over five hundred years. The Iberian conquistadors first introduced vines to Chile with which to make sacramental wines, and although these were considerably different in everything from flavor, aroma and character to the wines we associate with Chile today, the country has a long and interesting heritage when it comes to this drink. Chilean wine production as we know it first arose in the country in the mid to late 19th century, when wealthy landowners and industrialists first began planting vineyards as a way of adopting some European class and style. They quickly discovered that the hot climate, sloping mountainsides and oceanic winds provided a perfect terroir for quality wines, and many of these original estates remain today in all their grandeur and beauty, still producing the wines which made the country famous.
