Cinsault/Grenache/Mourvèdre. From certified-organic estate vines just northwest of the ancient city of Nîmes and just south of the Cévennes mountain range. The vines range from 10-30 years old, are planted on varying clay-limestone soils and have a generally eastern exposure. The terrain is flat to moderately hilly, with the vineyards (and cereal fields) surrounded by garrigue and woods. The three varieties are harvested at different times and thus vinified separately. The bunches are mainly destemmed—with a varying, small quantity of stems included--and fermented with native yeasts and without sulfur in concrete tanks. The Cinsault, which is the majority variety, sees a brief 5-6-day maceration. The three varietal wines are blended in March and aged in concrete. The wine is bottled unfiltered and unsulfured and usually lands under 12% by intention a light, fresh, easy-drinking style. Puech Redon opts for the Vin de France classification rather than the available IGP Cévennes.
