This is a deep red burgundy colored wine. The nose is of red fruits like raspberries and wild strawberries. Some hints of blackppeper and cassis can also be found in the wine. The mouth is sweet an filled with red fruit and some spiciness. It is a soft and delicate wine, with good structure and body but soft tannins. Very good balance between fruit and French oak. It is ideal to accompañy red meats and casseroles Blend 100% Cabernet Harvest May, 2020 Bottled January, 2008 Barrel Regime 15 % 6 Mo. Neutral barrel, 85% Stainless Alcohol 13.5% Production 4000 cases Our Cabernet Sauvignon vineyards barely produce 8,000 kilos per hectare, which results in a concentration that is easily seen and tasted in the wine. The grapes are hand-picked in early May and quickly transferred to the winery, where they undergo a rigorous selection process before being destemmed, crushed, and fermented in stainless steel tanks. Fermentation lasts approximately 10 days at 28°C (82°F), and once completed, the wine remains in the tank

From the valleys of California and Chile to the rolling hillsides of the Bordeaux region of France, the one red wine grape varietal you will find in abundance is the Cabernet Sauvignon. This darkly colored grape has been cultivated since the mid 18th century, when it was borne from a cross of fine Cabernet Franc and Sauvignon Blanc varietals. Since then, it has spread around the world and has been received with pleasure by wineries looking for a varietal which delivers excellence of flavor and aroma, whilst being hardy enough to resist frost and rot and other such difficulties. Indeed, Cabernet Sauvignon is probably the most recognizable red wine grape varietal on earth, and is easily distinguished by its high tannin level and acidic nature, which is often so beautifully mellowed by being blended with Merlot and other such grapes.

Chile is a fascinating country when it comes to wines and viticulture, and by far the most internationally renowned wine region in the country is the Valle Central. This expansive valley is located close to the Chilean capital of Santiago, and stretches between the Maipo Valley and Maule Valley, a long, winding fault through the mountainous regions of the country which is now almost completely covered by vineyards producing wines of exquisite character. The region itself may well be associated with the 'New World' of wines, but in actual fact, vineyards have been cultivated around the Maipo valley since the 16th century, when settlers from Europe brought vines across the ocean with which to make sacramental wines. A wide range of grape varietals thrive in the hot climate of Valle Central, from the Cabernet Sauvignon and Merlot vines the country is most famous for, to Syrah, Chardonnay, Sauvignon Blanc and Carmenere.
