Varietal: Cabernet Sauvignon
From the valleys of California and Chile to the rolling hillsides of the Bordeaux region of France, the one red wine grape varietal you will find in abundance is the Cabernet Sauvignon. This darkly colored grape has been cultivated since the mid 18th century, when it was borne from a cross of fine Cabernet Franc and Sauvignon Blanc varietals. Since then, it has spread around the world and has been received with pleasure by wineries looking for a varietal which delivers excellence of flavor and aroma, whilst being hardy enough to resist frost and rot and other such difficulties. Indeed, Cabernet Sauvignon is probably the most recognizable red wine grape varietal on earth, and is easily distinguished by its high tannin level and acidic nature, which is often so beautifully mellowed by being blended with Merlot and other such grapes.

The dry and arid region of Galilee in Israel is perhaps not the most obvious home of fine New World wines, but then, Galilee has many more things in common with Old World countries than one might think. The mineral rich, volcanic soils around the base of Mount Tabor have proven to be an ideal home for many exciting and classic Bordeaux grape varietals, and everything from Cabernet Sauvignon and Merlot grapes, to fine and flavorful Chardonnay and Sémillon varietals flourish under the hot, middle eastern sunshine. As one might expect, kosher laws play an important role in the production of Galilee wines, and religious experts are regularly called in at all stages of the wine making process to ensure that everything is being done in accordance to ancient religious practices.

For thousands of years, Israel has been an important country for wine production, with major wine regions growing thousands of acres of grapevines in the hot Mediterranean climate. The land itself is ideal for wine production, and has a mineral rich limestone based soil which helps ensure the grapes grow to full ripeness. Many of the vineyards of Israel are located at high altitudes, such as the popular and successful vineyards of Golan Heights in the Galil region, where the cooler temperatures and strong breezes create an ideal environment in which the imported French grape varietals can grow. Indeed, French grape varietals make up for the vast majority of grapes grown in Israel, with Cabernet Sauvigon, Merlot, Chardonnay and Sauvignon Blanc grapes growing in all five wine regions of the country.
