Hibiscus with oranges, walnuts and white pepper on the nose. Medium-bodied with a solid core of fruit and a fresh, vivid finish. Linear and spicy at the end with cloves and white pepper. Drink or hold.

The 2019 Pinot Noir Estate is also terrific and shows the classy, medium-bodied, fresher style favored by this estate. Bright cherry, darker raspberry, flower, and violet notes all define this wonderfully complete, balanced, elegant Pinot Noir. It’s going to keep for at least 7-8 years, and probably over a decade.

The 2019 Pinot Noir Estate is a gorgeous introduction to the vintage at The Hilt. Pliant and layered, the 2019 is a very serious wine at this level. Dark red cherry/plum, spice and lavender are all perked up by the wine's brightness. The 2019 is appealing and quite accessible, but it has a good deal of grip, too. Time in the glass brings out its captivating inner perfume. This is very nicely done.

Welcomes with a decidedly savory and wild nose with bright red berries, incense, blood orange, clove, green peppercorn and black tea. Notes of dried sage, rosemary, menthol and elderberry. Seamless and pure red fruit that rolls across the palate with pomegranate-like juiciness. One can sense the cold, windy conditions of our estate vineyards in the focused and streamlined attack and persistent yet balanced brightness on the finish. Solid Hilt structure with large quantities of impossibly fine tannins. Altogether a seductive, chalky and deeply complex Hilt ?state pinot noir.

Varietal: Pinot Noir

Regularly described as being the grape varietal responsible for producing the world's most romantic wines, Pinot Noir has long been associated with elegance and a broad range of flavors The name means 'black pine' in French, and this is due to the fact that the fruit of this particular varietal is especially dark in color, and hangs in a conical shape, like that of a pine cone. Despite being grown today in almost every wine producing country, Pinot Noir is a notoriously difficult grape variety to cultivate. This is because it is especially susceptible to various forms of mold and mildew, and thrives best in steady, cooler climates. However, the quality of the fruit has ensured that wineries and vintners have persevered with the varietal, and new technologies and methods have overcome many of the problems it presents. Alongside this, the wide popularity and enthusiasm for this grape has ensured it will remain a firm favorite amongst wine drinkers for many years to come.

The majority of Santa Barbara wines are red, with Cabernet Sauvignon being an important grape varietal for the dozens of wineries which call the county their home. However, white wine production is very much on the increase in Santa Barbara, as wine-makers discover how good the blend of sunshine and Pacific wind can be for many classic French white wine grape varietals.
