This classic wine in the Chanson portfolio has a bit of the forward wild strawberry notes of the Clos des Mouches and a bit of the structure of the Beaune Grèves. There are hints of cocoa, confit orange peel, smoke, and wild herbs. The grapes are from the 4.40-hectare Chanson monopole up-slope from Cent Vignes. They are vinified as whole clusters and aged in cask (25% new). The result should open up in several years and will age reliably for another twenty.

In this elegant and ripe nose, aromas of fresh cranberries, red cherries and pomegranate intermingle with red rose petals, brown mushroom, white peppercorn and thyme, kissed by a hint of clove and black tea leaf. The palate is opulent, with wild strawberries and ripe black plums embraced by rosehip and wild thyme. This delicious wine is balanced and shows great energy in addition to a long finish of red florals and black pepper.

89-92 This is also exceptionally pretty and perfumed with a slightly more deeply pitched nose that features notes of lilac, plum, violet and newly turned earth. There is excellent volume to the muscular and powerful medium-bodied flavors that deliver good if not genuinely special persistence on the overtly austere and complex if slightly lean finish. I suspect that this will successfully age out but it won't be right away.

Dark color. Intense aromas of cherries and small dark olives. Well-structured, ample and complex, true to its terroir. Very long and fleshy finish with well-integrated tannins.

Varietal: Pinot Noir

Pinot Noir grapes have been cultivated in and around the Burgundy region of France for centuries, where they have long been favored by vintners for their wide range of flavors, their thin skins and for producing wines which have light, smooth tannins, and a beautiful garnet red color Whilst they remain one of the flagship varietals of this special region, their wide popularity and recent status as a fashionable 'romantic' varietal has led to them being planted in almost every wine producing country in the world. However, the Pinot Noir demands a huge amount of care and attention from the wineries that wish to grow it, as this varietal is particularly susceptible to various forms of mildew and rot. Despite this, the grape is otherwise a favorite with wineries for the fact that it requires little extra effort once it begins fermentation. Pinot Noir is also widely known for producing some of the world's most famous sparkling wines, being one of two key grapes for the production of Champagne, and several other sparkling varieties.
