The 2019 Cabernet Sauvignon is better, with more balance as well as complexity. Red and black fruits, toasted spice, dried flowers, and spicy oak all define the nose, and it's medium to full-bodied, has a round, supple, elegant texture, ripe tannins, and outstanding length. Drink it over the coming decade.

The aromas offer notes of dried orange rind, black cherry, violets, blue fruit and potting soil. Full-feeling flavors follow, showing density through the middle. Give it time for the tannins to settle or decant.

Generous yet well-structured, with layered black currant, bay leaf and savory spice flavors that gather tension and tannins on the finish. Drink now through 2028. 1,100 cases made.
Winery
Black cherry, plum, warm vanilla and espresso bean on the nose. Huge entry on the palate leads to a rich, dense mid palate with round, chewy tannins. Long finish driven by black fruit notes and hints of toasted oak.

Varietal: Cabernet Sauvignon

From the valleys of California and Chile to the rolling hillsides of the Bordeaux region of France, the one red wine grape varietal you will find in abundance is the Cabernet Sauvignon. This darkly colored grape has been cultivated since the mid 18th century, when it was borne from a cross of fine Cabernet Franc and Sauvignon Blanc varietals. Since then, it has spread around the world and has been received with pleasure by wineries looking for a varietal which delivers excellence of flavor and aroma, whilst being hardy enough to resist frost and rot and other such difficulties. Indeed, Cabernet Sauvignon is probably the most recognizable red wine grape varietal on earth, and is easily distinguished by its high tannin level and acidic nature, which is often so beautifully mellowed by being blended with Merlot and other such grapes.

Region: Washington State

The popularity of fine red wines, made with classic Old World grape varietals, has continued to increase in the United States over the past few decades. Washington state has consistently impressed with their red wine grape varietals, and many of the most popular American red wines of the past twenty years have come from this unique and interesting state with its two distinct regions. The vast majority of Washington's wines come from the arid eastern half of the state, a semi-desert irrigated by the rivers which run through the area, with considerably fewer wineries found in the wetter western side. Washington is renowned for the production of strong, fruit-forward wines made with Merlot, Cabernet Sauvignon, Syrah and other varietals, with many fine white wines being produced there also.

Country: United States

The first European settlers to consider growing grapevines in the United States must have been delighted when they discovered the now famous wine regions within California, Oregon and elsewhere. Not even in the Old World are there such fertile valleys, made ideal for vine cultivation by the blazing sunshine, long, hot summers and oceanic breezes. As such, it comes as little surprise that today more than eighty-nine percent of United States wines are grown in the valleys and on the mountainsides of California, where arguably some of the finest produce in the world is found. However, American wine does not begin and end with California, and due to the vast size of the country and the incredible range of terrains and climates found within the United States, there is probably no other country on earth which produces such a massive diversity of wines. From ice wines in the northern states, to sparkling wines, aromatized wines, fortified wines, reds, whites, rosés and more, the United States has endless surprises in store for lovers of New World wines.
