This harmonious Champagne offers a lovely range of ripe green apple and white peach fruit, blood orange granita and pickled ginger flavors set on the refined, raw silk–like mousse. There’s a statuesque feel, with a chalky underpinning and a spine of firm acidity. However, this is so well-meshed as to be elegant rather than imposing while gliding across the palate and lingering on the spiced finish. Pinot Noir and Chardonnay. Disgorged January 2025. Drink now through 2031.

The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

Disgorged in August 2019, Hébrart's new release of the NV Brut Premier Cru Mes Favorites Vieilles Vignes is based on the 2015 vintage. Wafting from the glass with aromas of pear, white flowers, blanched almonds and Meyer lemon, it's medium to full-bodied, bright and pillowy, with a pretty core of fruit, lively acids and a refined mousse. Once again, it derives from superior, south-facing sites in Mareuil-sur-Ay that also inform his Special Club bottling.

The NV Brut Mes Favorites Villes Vignes is a powerful, structured Champagne. There's plenty of old-vine intensity and bright acid driving a core of Pinot-based fruit. I would prefer to cellar this for at least another year or two, as it is clearly still coming together. It's a wine for readers who enjoy rich, vinous Champagnes at the dinner table.
