Aux Chaignots is on the Vosne side of the village and the elegance is in full evidence here. Whole clusters are fermented on ambient yeasts in wooden vats, before ageing over two winters in used oak. The fruit shines through, yet there is a restrained elegance here; it is ‘less forward without being strict’, according to Pacalet. The freshness that comes from being at the end of the combe brings a delicious balance to the wine.
