The old vines that give the fruit for Pacalet’s village-level Ladoix have produced a wine fairly deep in colour with an expressive plummy fruit aroma and a suggestion of spice and earth. The old vines give low yields but good concentration. The texture is light and lively but there is no lack of length. The grapes come from a lieu-dit called Champs Pussuet near the Clos de Langres ; they are fermented largely as whole clusters and no sulphur is added before bottling.
