There are few white wine grape varietals as famous or widely appreciated as the Chardonnay, and with good reason. This highly flexible and adaptable grape quickly became a favorite of wineries due to its fairly neutral character. This neutrality allows the wineries to really show off what they are capable of doing, by allowing features of their terroir or aging process to come forward in the bottle. As well as this, most high quality wineries which produce Chardonnay wines take great efforts to induce what is known as malolactic fermentation, which is the conversion of tart malic acids in the grapes to creamy, buttery lactic acids associated with fine Chardonnay. Whilst the popularity of Chardonnay wines has fluctuated quite a considerable amount over the past few decades, it seems the grape varietal allows enough experimentation and versatility for it always to make a successful comeback.

California has long been the New World's most important and prodigious wine producing regions, with a history which stretches back to the 18th century and the Spanish pioneers who settled here. Today, California produces vast quantities of wine, and if it were a country, it would be the fourth largest producer of wine on earth. Despite experiencing many problems in the mid 20th century, including a very serious blight which almost crippled the state's wine industry, the ideal terroir and excellent climate ensured that Californian wines soon became the envy of the New World once again. California produces a vast range of wines, and utilizes a long list of fine grape varietals, with many wineries and their produce more closely resembling those of France and other Old World countries in regards to character, practices and flavors

The first European settlers to consider growing grapevines in the United States must have been delighted when they discovered the now famous wine regions within California, Oregon and elsewhere. When it comes to New World wines, and especially wines from the United States of America, Napa Valley is something of a standard bearer. Over its relatively short history, it has managed to transform itself from being a fairly insignificant region, to becoming one of the most important and highly regarding wine locations on earth. With an ideal climate for viticulture, blazing sunshine and a low level of rainfall, this valley is shielded on many sides by mountain ranges which help it maintain a consistent level of heat, light and moisture throughout the year. Today, Napa Valley is a home of innovation and quality, with dozens of grape varietals thriving in the fertile soils. However, the main varietals grown there have always been Cabernet Sauvignon, Chardonnay, Pinot Noir, Merlot and Zinfandel, and the wines they produce are constantly lauded by critics and competitions across the globe.
