Varietal: Merlot
Merlot has long been a grape associated with excellent quality of character and flavor, and has spread around the globe as a result of its relative hardiness and reliability. From Chile to Bordeaux, Merlot vines grow to ripeness, and end up producing a remarkably wide variety of wines. Single variety wines made from Merlot grapes tend to be beautifully rich in color, and packed full of jammy, hedgerow flavors and notes of plum and currant, and ideal for newcomers to red wines as a result of their medium body. This medium body comes about due to the fact that the skin of Merlot grapes tends to be quite thin, meaning that the tannin content of Merlot wines is lower than those made from other blue-black grapes. The mellowness and roundedness which results is ideal for blending, also, and Merlot is used as a blending grape in some of the world's finest wineries, to produce aged wines of exceptional character.
Region: Galilee
Galilee is a region of unrivaled historical, religious and cultural importance, and is beginning to really find its feet as a wine region, too. The blazing sunshine which beats down on the Israeli vineyards around the base of Mount Tabor allows vintners to grow grapes of exceptional quality, and the volcanic, basalt enriched soils found in the region are ideal for producing and cultivating a wide range of grape varietals. A surprising amount of Bordeaux grapes are successfully grown in Galilee, with Cabernet Sauvignon, Syrah, Merlot and Chardonnay all doing particularly well in the region. As one might expect, the wine making process which turns such wines into grapes in Galilee is carefully overseen by religious specialists, in order to sell the wines as kosher products around the world.

The vineyards of Israel have long been associated with high quality wines, and the wineries which operate within the country use the fantastic Mediterranean climate and mineral rich soils to grow fine French grape varietals such as Cabernet Sauvigon, Merlot, Chardonnay and Sauvignon Blanc all over the country. Israel has five major wine regions; Galil, The Judean Hills, Shimshon, The Negev, and the Sharon Plain, with many of the most successful vineyards being located at high altitudes to benefit from the cooler temperatures and stronger breezes the vines need to produce better yields. Today, Israeli wineries are proving to be highly successful with audiences around the world, and the fact that the vast majority of Israeli wines are made to kosher requirements mean they are often in high demand amongst the worldwide Jewish population, although they are also highly popular with people of all backgrounds.
