The NV Brut Premiere Cuvee is exceptionally polished and refined from the very first taste. Lemon, grapefruit, green pears and flowers are some of the many notes that are woven together in this classy, totally polished wine. The two-plus years of bottle age post-disgorgement are a great example of how first-class NV Champagnes can develop beautifully in bottle, something I have seen time and again with Bruno Paillard’s wines. Hints of hazelnut, almond, crushed rocks and pastry add elements of complexity, yet the wine retains its classic sense of energy and vibrancy. This is a great showing. A fine mineral layer on top of the subtle sourdough yeastiness, lemon zest and green apples. Fruity and delineated on the palate with generous, creamy beads and a flavorful finish. Quite approachable, but it ends dry.

The NV Extra Brut Premiere Cuvee is bright, precise and beautifully focused. In other words, a classic Bruno Paillard Champagne. Lemon confit, white flowers, tangerine peel, chamomile and dried flowers all grace this taut, super-expressive NV Champagne. Medium in body and airy, with terrific depth the Premiere Cuvee is classy and inviting. Time in the glass brings out the breadth and textural richness of the red grapes in the blend. It will drink beautifully as an aperitif or with lighter foods at the dinner table.

The nonvintage Champagne from this producer shows its penchant for dry wines. This wine, a blend of the three Champagne grapes, is dry but it makes up for that with the ripe white and citrus fruits. It is ready to drink.

There are actually seven different grape varietals allowed to be included in a Champagne sparkling wine, although grape varietals such as Pinot Blanc, Arbanne and Pinot Gris are used less and less commonly in its production. Whilst the Chardonnay varietal grapes offer their distinctive biscuit flavor and wonderful astringency, it is the Pinot Noir grapes (most commonly used for producing beautifully light red wines) which give the Champagne wines their length and backbone.
