Bouchard's NV Blanc de Noirs Côte de Val Vilaine (2018) is fleshy and dramatic, bursting with aromas of pear, warm bread, orange oil, nutmeg and beeswax. Medium to full-bodied, textural and enveloping, it's one of the most gourmand, generous renditions of Val Vilaine to date, yet it remains beautifully precise and vibrant—even racy. It will be hard to resist young, but I suspect it will also evolve very gracefully in the cellar. The NV (2018) Blanc de Noirs Val Vilaine is bright, fresh and wonderfully nuanced. Orchard fruit, citrus and floral notes give the Val Vilaine so much energy. Cédric Bouchard coaxes so much nuance from these 40 year-old vines. The Val Vilaine is always the youngest wine in the range - the current release is the 2018, which spent just 15 months on its lees - but it will give readers who aren't familiar with these wines a very good idea of the house style. Varietal: Champagne Blend

The careful blending of Chardonnay and Pinot Noir varietal grapes has long been the secret to the success of the famous sparkling wines of the Champagne region. The wines of this region have gone down in history as the finest example of France's sparkling produce, and the methods of processing the grapes in this region have been imitated in almost every wine producing country in the world. There are actually seven different grape varietals allowed to be included in a Champagne sparkling wine, although grape varietals such as Pinot Blanc, Arbanne and Pinot Gris are used less and less commonly in its production. Whilst the Chardonnay varietal grapes offer their distinctive biscuit flavor and wonderful astringency, it is the Pinot Noir grapes (most commonly used for producing beautifully light red wines) which give the Champagne wines their length and backbone.
