The 2022 Chablis Côte de Léchet Réserve ler Cru comes from 60-year-old vines and is raised halt in barrel and half in stainless steel. It sports a clever reduction on the nose, nicely focused with ample citrus fruit, quite minerally after a few swirls. The well-balanced palate is focused and precise, with neatly integrated oak and a slight nuttiness towards the lingering finish. Quite delicious and easily the best of Defaix's Premier Crus.
Winery
The grapes come from one of our oldest vineyards, planted in 1955 by Bernard Defaix and exceptionally well exposed to the sun (S-SE). This “cuvée” is partially fermented in oak barrels. Half of the wine is fermented in barrels and remains for 12 months on fine lees with regular "batonnage". After tasting, this wine aged in barrels is blended with the same“cuvée” that has been aged in stainless steel tanks. The final blend is bottled 18 months after the harvest. This “cuvée” Reserve conveys all of the Côte de Lechet's power. The bouquet marries floral elegance with the mineral intensity of the terroir. The palette is characterised by roundness, plenitude, richness and length. Excellent when served with salmon or other fish delicacies.

Varietal: Chardonnay

There are few white wine grape varietals as famous or widely appreciated as the Chardonnay, and with good reason. This highly flexible and adaptable grape quickly became a favorite of wineries due to its fairly neutral character. This neutrality allows the wineries to really show off what they are capable of doing, by allowing features of their terroir or aging process to come forward in the bottle. As well as this, most high quality wineries which produce Chardonnay wines take great efforts to induce what is known as malolactic fermentation, which is the conversion of tart malic acids in the grapes to creamy, buttery lactic acids associated with fine Chardonnay. Whilst the popularity of Chardonnay wines has fluctuated quite a considerable amount over the past few decades, it seems the grape varietal allows enough experimentation and versatility for it always to make a successful comeback.
