Floc de Gascogne is a vin de liqueur from the armagnac region made with two-thirds unfermented grape must (unclarified juice) and one-third armagnac that are blended together and aged in neutral tanks for a year. At Château de Ravignan, a grape must blend of approximately half each of Colombard and Ugni Blanc is muted with the most recent distillate. This addition of alcohol impedes yeast from thriving so that both the sugar and delicious fruit characteristics from the grapes remain. Traditionally, this spirit is served as an apéritif in Gascony, but has recently found new purposes as a dessert wine or as an accompaniment to melon and cheese.
