There are few white wine grape varietals as famous or widely appreciated as the Chardonnay, and with good reason. This highly flexible and adaptable grape quickly became a favorite of wineries due to its fairly neutral character. This neutrality allows the wineries to really show off what they are capable of doing, by allowing features of their terroir or aging process to come forward in the bottle. As well as this, most high quality wineries which produce Chardonnay wines take great efforts to induce what is known as malolactic fermentation, which is the conversion of tart malic acids in the grapes to creamy, buttery lactic acids associated with fine Chardonnay. Whilst the popularity of Chardonnay wines has fluctuated quite a considerable amount over the past few decades, it seems the grape varietal allows enough experimentation and versatility for it always to make a successful comeback.

It isn't difficult to see how California became one of the world's most important, successful and influential wine regions. Since the first vines were planted in the state by Spanish pioneers in the 18th century, the region has made the most of its ideal climatic conditions, which range from hot, dry and arid to windswept and cool, for vineyard cultivation and wine production. Oregon, Washington State and New York have all developed sophisticated and technologically advanced wine cultures of their own, and the output of U.S wineries is increasing each year as more and more people are converted to their produce.

It has become something of a region based around experimentation and innovation, and many of the wine-makers in Monterey County are keen to develop new hybrids and clones of successful and wildly popular French and Italian grapes, renowned for their superb flavor and aromas. Indeed, over forty different grape varietals are grown in Monterey County, and they all benefit hugely from the gorgeous Californian sunshine and mineral rich soils the state is renowned for.
