Officially non-vintaged, the recent issue of the NV Extra Brut Entre Ciel et Terre blends 60% Pinot Noir with 40% Pinot Meunier, predominantly from the 2010 harvest. The wine spent five years on the second lees and was disgorged in March 2017 (Lot EX100317). The bouquet is clear, fine and fresh in its stunningly fruity aromas of mirabelles. Filigreed, finessed and elegant on the palate, this is a lean, pure and stimulatingly dry yet mouth-filling cuvée with a more airy rather than earthy character. The finish is dry, firm, yeasty and full of character, but it is perhaps a bit too austere for some of our readers at the moment. Menthol, spices, orchard fruit and spring flowers add up to a lively, energetic and delicate bouquet. Very singular spice aromas appear with aeration. Tense and taut, the perfectly balanced palate displays a laser-like texture. This is all complexity and finesse - a very interesting Champagne. 90% Pinot Meunier and 10% Pinot Noir, with a dosage of 4.83g/l.

Her NV Brut Entre Ciel Et Terre is a refined wine laced with perfumed peaches, apricots, smoke, flowers and mint. This mid-weight yet generous Champagne offers gorgeous depth and richness, with a long, refined finish. The Ciel et Terre shows more than enough complexity and nuance to offer fine drinking now and over the next few years. Though labeled a NV wine, Entre Ciel Et Terre is a single-vintage wine (in this case 2003), 41% Chardonnay, 35% Pinot Noir and 24% Meunier that spent 12 months in oak and was bottled with 4 grams of dosage.

This blend of chardonnay (50 percent), pinot noir and meunier spends eight years on the lees. That extended aging has brought the wine’s fruit and minerality into a sweet-savory harmony. It’s clean, round and saturated with flavor, the sweetness cut by a clean sweep of bubbles.

The careful blending of Chardonnay and Pinot Noir varietal grapes has long been the secret to the success of the famous sparkling wines of the Champagne region.
