From a vineyard that was formerly owned by Vincent Girardin and that Jean-Claude Ramonet has in fermage, the 2016 Chassagne-Montrachet 1er Cru Clos du Cailleret Monopole displays an old-fashioned bouquet of musky peach, tangerine and honeycomb. On the palate, the wine is medium to full-bodied, satiny and ample, with a rich, layered mid-palate that's structured around vibrant acids. The extremes of the vintage make their mark but it's a superb wine in it somewhat idiosyncratic style.

An admirably deft application of wood easily allows the similar if more overtly floral-suffused nose to easily be appreciated. There is a bit more volume to the delicious, seductive, indeed even opulent, medium-bodied flavors that are richer but a bit less mineral-driven, all wrapped in a powerful, sappy and mouth coating bitter lemon-inflected finale where a hint of warmth appears. This is certainly very good but I slightly prefer the greater elegance of the Les Caillerets.

Varietal: Chardonnay

There are few white wine grape varietals as famous or widely appreciated as the Chardonnay, and with good reason. This highly flexible and adaptable grape quickly became a favorite of wineries due to its fairly neutral character. This neutrality allows the wineries to really show off what they are capable of doing, by allowing features of their terroir or aging process to come forward in the bottle. As well as this, most high quality wineries which produce Chardonnay wines take great efforts to induce what is known as malolactic fermentation, which is the conversion of tart malic acids in the grapes to creamy, buttery lactic acids associated with fine Chardonnay. Whilst the popularity of Chardonnay wines has fluctuated quite a considerable amount over the past few decades, it seems the grape varietal allows enough experimentation and versatility for it always to make a successful comeback.

Interestingly, Cote De Beaune produces more red wine than white wine, despite its white wines being so famous. The red wines of Cote De Beaune are mainly made from Pinot Noir, but are relatively very light and fruity in their character, perfect for sipping on a warm, sunny day alongside a wide range of foods.
