The Kikuhime Kukurihime Daiginjo Sake is made from Yamadanishiki rice from Yokawa with a milling ratio of 50% and aged for 10 years. This has an appealing nose that was sharper and slightly nuttier than the first sake wine. The palate had a pleasant acidic bite and bitterness that combined supremely well with the sushi, just taking an edge off the richness, and the finish was comparatively dry and slightly smoky.
