The grapes were harvested, destemmed, and gently crushed direct to press with minimal skin contact. The wine has a vibrant color despite having little time on the skins. The clarified juice was cool fermented with selected yeast strains to retain the primary varietal characters. 'Spinning Cone' technology is used to reduce the alcohol from a portion of the base wine. This is a process of low vacuum distillation that can target removal of alcohol without impacting the aroma of the wine. The alcohol is reduced to below 1% on approximately 60% of the final volume, with 40% of the base blended back to achieve a final alcohol level of 7%. COLOR: Pretty pale pink color AROMA: Bright aromas of watermelon with berry fruit and floral notes. PALATE: Elegant and finely flavored on the palate with crisp acidity, fresh berry flavors and a dry finish. CELLAR: Enjoy now, or within one to three years, with confidence. APPELLATION: New Zealand PAIRINGS: Ideal as an aperitif or summer sipper, this easy-drinking wine also pairs perfectly with lighter salads and other fare.

The warm, sunny climate coupled with brisk oceanic winds and remarkably fertile volcanic soils produce grapes of exceptional quality, and New Zealand wines are notable for their ability to carry the terroir they are grown on into the bottle. Whilst the Sauvignon Blanc wines are probably the most widely exported and popular to come out of new Zealand, fantastic results have been produced from the Bordeaux style wines made in the Auckland region, and the Pinot Noir wines of Central Otago. These Pinot Noir wines are far more fleshy than their Burgundy counterparts, and are probably best enjoyed when young, and bursting with the fruit flavors they carry so well.
