The extra TLC given to Nautilus's premium Sauvignon is evident. A radiant pale gold in color, it needs a few swirls in glass to aerate but it opens fairly quickly. As it does, there's an aromatic play between lime, lemon pith, pineapple and honeysuckle. There's a beautifully waxy texture in the mouth—aided by the subtle oak influence—and a crunch of acidity. Those pithy citrus fruit characters and a gentle spice linger on the long finish.

Marlborough Sauvignon Blancs are characterised by freshacidity and aromatic intensity derived from the cool climate, high sunlight intensity and free draining soils. Handpicking and fermenting in cuve give the Paper Nautilus Sauvignon understated aromas of citrus peel, wet stones and hazelnuts. The palate is concentrated yet subtle with a creamy texture, focused acidity and a dry lingering finish.

Varietal: Sauvignon Blanc

One of the most commonly planted and cultivated white wine grape varietals in the world is the Sauvignon Blanc. This green skinned grape originated in southern France, where it is still grown today and produced into exceptionally high quality wines. However, it is also very much a varietal of the New World, and can be found almost anywhere with the correct climatic conditions for it to thrive in. Generally, Sauvignon Blanc grapes prefer cooler climates, and benefit best from an early harvest. Too much exposure to heat causes the juices inside the fruit to lose much of their character, and results in flat, uninteresting wines devoid of the grapes' usual bite and crispiness. In many countries, Sauvignon Blanc grape juices are aged in barrels, and are allowed to undergo malolactic fermentation, which transforms this dry and refreshing, zesty and fruity white wine into something far mellower, more buttery and refined.

Although most commonly associated with excellent Sauvignon Blanc wines, the Marlborough region of New Zealand has also consistently proven that it is capable of growing extremely high quality Pinot Noir and Chardonnay varietals, thus helping the country's wine industry grow in size and range. The region is an exceptionally good one for growing excellent grapes, the climatic conditions allow wineries to extend the ripening times of the fruit, and the result is fruit which is packed full of bright, strong flavors and able to express the finer features of the terroir it grows on. Since the 1970s, Marlborough has greatly impressed the world with its superb wines, and this special region now accounts for over sixty percent of the area of New Zealand under vine.

Whilst the Sauvignon Blanc wines are probably the most widely exported and popular to come out of new Zealand, fantastic results have been produced from the Bordeaux style wines made in the Auckland region, and the Pinot Noir wines of Central Otago. These Pinot Noir wines are far more fleshy than their Burgundy counterparts, and are probably best enjoyed when young, and bursting with the fruit flavors they carry so well.
