The Savvy is picked based on flavor and acid profile. It undergoes a long, cool fermentation in stainless steel. Time on lees also helps with yeast autolysis adding mouth feel while still retaining the pure clean acid freshness of the wine. Minimal fining, crossflow filtration. The end result is a balance between the tropical passionfruit notes known to the region, and delicate floral herbal nuances with capsicum and citrus notes.

Varietal: Sauvignon Blanc

Sauvignon Blanc is widely considered to be one of the finest varietals of white wine grapes. The green skinned fruit is notable for ripening relatively early in the year, due to the fact that it prefers milder temperatures and cannot maintain its distinctive flavors in hot climates. As such, it has become a favorite grape varietal for wineries in many very different countries around the world, where it can benefit from brisk, coastal breezes and mild early summers. Sauvignon Blanc is revered for its freshness and zesty character, and generally produces wines which are dry and very crisp on the palate. However, there are a wide variety of wines produced from this wonderfully versatile grape – with many wineries preferring to age the fermented juices in oak, or allowing malolactic fermentation to add a creamier, buttery finish to the grassy and tropical, citrus flavors it often carries.

Country: Australia

With over sixteen thousand hectares of Australian land now under vine, Australia has become something of a world leader in regards to wine production. One of Australia's key attributes to their success has been their willingness to leave traditional vineyard practices to one side, and develop techniques which are perfectly suited to a New World country. Modern Australian wineries take into consideration the climate and the unique soil types which cover much of their country, and have had fantastic results from cross-breeding programs and blending practices which make the most of the grape varietals which thrive most successfully there, notably the Shiraz and Chardonnay grapes. In recent years, Australia has been lauded as the 'most influential' wine producing country in the world, and the rest of the New World is looking down under for inspiration, and the ability to produce comparable fine wines on their own terrain.
