A fresh, off-dry Champagne with a round texture and an easy finish. Medium body. Creamy. Cooked apples and pears. Some candied apple, too. Flavorful finish. Five years on the lees. It is more like a Extra-Sec Champagne with a higher dosage that the normal Brut Reserve non-vintage. Drink now.

Bright yellow. Deeply perfumed aromas of poached pear, melon, nectarine and lemon curd are complemented by suggestions of buttered toast, anise and chamomile. Plush and broad on the palate, offering ripe citrus and pit fruit flavors with a touch of chalky minerality adding cut and lift. A floral quality builds slowly with air and carries through the spicy, sappy, gently sweet finish. I like this Champagne's balance of fruitiness and vivacity and there's no way that I'd have guessed that its dosage was so high.
Winery
Taittinger Nocturne is a sweeter champagne, made from 40% Chardonnay and 60 % Pinot Noir and Meunier from 35 vineyards. It is the result of several harvests undertaken when the fruit had reached perfect maturity. The uniqueness of its mix and its long maturation period in the cellars gives it its fullness and smoothness. It works well as an accompaniment to dessert, or simply as a digestif on its own after a meal.

However, it is in the grape varietals which thrive in this region where the secrets to the Champagne's success can be found – the acidic, flavorful Chardonnay grapes meeting the characterful Pinot Noir varietal, and coming together to produce something wonderful in the bottle. The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.
