For most of us, when we look for red wines in a wine store or supermarket, the name Cabernet Sauvignon stands out as a mark of quality and reliability. The same can be said for the way those who cultivate the grapevines see them, too, as part of the reason Cabernet Sauvignon varietal grapes have had so much success all over the world is due to their hardiness against frost, reliability in regards to yield and quality, and great resistance to rot. As such, Cabernet Sauvignon is a winemaker's dream of a grape, consistently delivering excellence alongside a few pleasant surprises. Despite the fact that the grape on its own in a young wine can often be a bit overpowering, too astringent and challenging for many tastes, it is the perfect grape varietal for blending and aging in oak. Such a truth has been displayed for centuries now in some of the finest wineries on earth, for whom Cabernet Sauvignon grapes are the grape which adds the punch to their world-beating blended wines.
Region: Galilee
The beautiful Israeli region of Galilee is one of the most famous sites in the world when it comes to cultural and religious history, and yet the wines of this dry and arid region are yet to really make a big impact on the wine stores of the western world. However, the high quality of the produce being made in the region could change all this, as the past few years have been exceptionally good for vintners in Galilee, with a wide range of imported French grape varietals having flourished in the vineyards around the fertile base of Mount Tabor. Perhaps surprisingly, given the difference in climatic conditions, Bordeaux grapes make up for most of the varietals planted in Galilee, and Sémillon, Chardonnay, Cabernet Sauvignon and Merlot can be found growing extremely well all over the region. Helped by the volcanic basalt soils, these grapes produce wonderfully characterful and flavorful wines, enjoyed by kosher observing Jewish communities and others all over the world.

Israel has five major wine regions; Galil, The Judean Hills, Shimshon, The Negev, and the Sharon Plain, with many of the most successful vineyards being located at high altitudes to benefit from the cooler temperatures and stronger breezes the vines need to produce better yields. Today, Israeli wineries are proving to be highly successful with audiences around the world, and the fact that the vast majority of Israeli wines are made to kosher requirements mean they are often in high demand amongst the worldwide Jewish population, although they are also highly popular with people of all backgrounds.
