Meursault is a limpid and brilliant lightly accented gold-green, canary yellow or polished bronze-gold depending on its age. The nose evokes the scent of ripe bunches of grapes. When young, toasted almonds and hazelnuts compete with hawthorn, elderberries, bracken, lime blossom and verbena. The nose also features butter, honey, citrus fruits and flint. On the palate, a rich and opulent wine, with delicious and delightful hazelnut notes, achieving a superbly silky balance between unctuousness and freshness. With a long and structured finish, a Meursault wine needs time to mature. It’s an excellent white for laying down. Its aromatic power and exceptional balance between richness and acidity make this one of the great wines of Burgundy. It will go with almost any fine food without blushes. Finely textured fish and meats, grilled shellfish and shellfish in sauce all work well with the lively and supple balance of Meursault. Even blue cheeses and foie gras are an immediate and happy match. There are several schools of thought on the etymology of Meursault without any clear winners, but according to one theory, its wines are so brilliant that they compete with the sun: “Meurs soleil!”

Varietal: Chardonnay

There are few white wine grape varietals as famous or widely appreciated as the Chardonnay, and with good reason. This highly flexible and adaptable grape quickly became a favorite of wineries due to its fairly neutral character. This neutrality allows the wineries to really show off what they are capable of doing, by allowing features of their terroir or aging process to come forward in the bottle. As well as this, most high quality wineries which produce Chardonnay wines take great efforts to induce what is known as malolactic fermentation, which is the conversion of tart malic acids in the grapes to creamy, buttery lactic acids associated with fine Chardonnay. Whilst the popularity of Chardonnay wines has fluctuated quite a considerable amount over the past few decades, it seems the grape varietal allows enough experimentation and versatility for it always to make a successful comeback.

In the beautiful French wine region of Burgundy, there is archaeological evidence to suggest that there has been viticultural activity going on for at least two thousand years. To add to this, there are early written records praising the exceptional wines produced in this region dating back to the 6th century, making Burgundy one of the oldest established and still operational wine regions in the world. The region is most commonly associated with fine red wines, with Pinot Noir being the primary grape varietal grown on its rolling hillsides and gently sloping valleys. However, Chardonnay grapes are also produced in abundance for the production of their fine white wines, with both varietals benefiting greatly from the region's warm, hot summers and the superb soils which make up the terroir.

The region is highly respected as an excellent producer of Chardonnay wines, and the Chardonnay grapes which grow there, on the southern slopes of the Cote d'Or, are packed full of the unique and powerful characteristics of this very special terroir. Interestingly, Cote De Beaune produces more red wine than white wine, despite its white wines being so famous. The red wines of Cote De Beaune are mainly made from Pinot Noir, but are relatively very light and fruity in their character, perfect for sipping on a warm, sunny day alongside a wide range of foods.
