There is Cava, and then there are the wines made by Raventós i Blanc. In this unusually elegant pink sparkler, the super-pale hue is from an addition of Monastrell from almost 50-year-old vines; some of the Xarel.lo and Parellada vines that also contribute fruit are even older. Juicy, peppery cherry on the nose spells immediate freshness, with more berry notes trailing in its wake. Fresh finish. Xarel-lo, Macabeo, Parellada and Monastrell. Disgorged March 2023. Drink now through 2026. 17,000 cases made, 9,000 cases imported.
Winery
Intriguing like the night, and full of mystery: a rosé body that conceals the soul of a white. Monastrell grapes impart a special complexity and elegance to De Nit, without affecting the rich freshness characteristic of all our cavas. The grapes are harvested by hand and rapidly delivered to the winery, where they are processed via a gravity flow system. At each stage of the production process the atmosphere is controlled by dry ice. Assemblage is followed by bottle fermentation and ageing for at least 15 months in the neck-down position.

Varietal: Champagne Blend

The careful blending of Chardonnay and Pinot Noir varietal grapes has long been the secret to the success of the famous sparkling wines of the Champagne region. The wines of this region have gone down in history as the finest example of France's sparkling produce, and the methods of processing the grapes in this region have been imitated in almost every wine producing country in the world. There are actually seven different grape varietals allowed to be included in a Champagne sparkling wine, although grape varietals such as Pinot Blanc, Arbanne and Pinot Gris are used less and less commonly in its production. Whilst the Chardonnay varietal grapes offer their distinctive biscuit flavor and wonderful astringency, it is the Pinot Noir grapes (most commonly used for producing beautifully light red wines) which give the Champagne wines their length and backbone.
