Aromes de Pavie 2016 has a deep garnet color. It charges out with flamboyant scents of baked black plums, boysenberry preserves, and mocha, plus wafts of tapenade, mincemeat pie, and star anise. Full-bodied, the palate is densely laden with black fruit preserves and exotic spice layers, framed by velvety tannins and amazing tension, finishing long and fantastically showy.

There are few regions in the world with stricter regulations in regards to wine production and grape varietals than those found in Bordeaux, France. Here, in the home of the world's finest wines, the type and quality of grapes used is of utmost importance, and the legendary wineries which work on the banks of the Gironde river have mastered the careful art of juice blending to find the perfect balance for their produce. Whilst there are six 'official' Bordeaux grapes, the two key varietals for almost every fine Bordeaux wine are Cabernet Sauvignon and Merlot, and with good reason. Whilst Cabernet Sauvignon grapes are renowned for their acidity and astringency, strong fruit and spice flavors and full body, Merlot grapes are notably rounded, soft, fleshy and lighter on tannin. The combination of these two varietals, along with a small percentage of (commonly) Petit Verdot or Cabernet Franc, is the perfect balancing act â€“ the two grape varietals cancel out each others weaker points, and accentuate all that is good about the other.

Since 2015, this estate has made a concerted effort to up the quality of their second wine, adding 4 hectares that previously went into the grand vin as well as purchasing vines on the upper plateau. I’d say it’s working, as the 2016 Aromes de Pavie certainly has a “baby Pavie” feel in its full-bodied, rich, yet elegant profile. Sporting a deep purple color as well as powerful notes of blackberries, truffle, forest floor, and tobacco, it has remarkable purity of fruit, silky tannins, and a great finish. It ranks with the top second wines in Bordeaux and is going to keep for 20-25 years. The blend is 66% Merlot, 21% Cabernet Franc and 13% Cabernet Sauvignon and was aged in 50% new French oak.

The 2016 Arômes de Pavie has a deep garnet-purple color and is a little closed to begin, slowly revealing notes of crushed red and black cherries, raspberry preserves, plum pudding, blueberry pie and prunes with touches of espresso, star anise, cumin seed and wood smoke plus a waft of dusty soil. Full, firm and grainy structured, the rock-solid frame supports all the generous black and red fruit preserves with plenty of exotic spice nuances, finishing long and earthy.

The 2016 Arômes de Pavie, the second wine from Pavie, is matured in 50% new oak for 16 or 17 months. It presents a ripe, opulent bouquet of very pure kirsch, blueberry and cassis aromas, becoming more floral with aeration. The palate is medium-bodied with some wood tannin on the entry and notes of dark chocolate and tobacco infusing the black fruit. The finish is rounded and quite heady. This will require four to five years in bottle.

Second label. Baked fruit, plum, dark cherries, blackcurrants, dates, and raisins, with warming aromas of a hot vintage. The palate is nicely defined with woody spice and black cherry fruit. Grippy, crushed velvet tannins and warming alcohol give way to a salty, mineral finish of great length.
