Another wine I was able to taste multiple times, the 2016 Château Dassault is 73% Merlot, 22% Cabernet Franc and 5% Cabernet Sauvignon that was brought up in 70% new oak. This deeply colored beauty boasts a rocking bouquet of crème de cassis and blackcurrant fruits intermixed with spice, chocolate, subtle oak, and graphite. It’s seamless and elegant on the palate, with full-bodied richness, terrific tannins, and a great finish. In short, it’s a beautiful Saint Emilion that will keep for two decades.

There are few regions in the world with stricter regulations in regards to wine production and grape varietals than those found in Bordeaux, France. Here, in the home of the world's finest wines, the type and quality of grapes used is of utmost importance, and the legendary wineries which work on the banks of the Gironde river have mastered the careful art of juice blending to find the perfect balance for their produce. Whilst there are six 'official' Bordeaux grapes, the two key varietals for almost every fine Bordeaux wine are Cabernet Sauvignon and Merlot, and with good reason. Whilst Cabernet Sauvignon grapes are renowned for their acidity and astringency, strong fruit and spice flavors and full body, Merlot grapes are notably rounded, soft, fleshy and lighter on tannin. The combination of these two varietals, along with a small percentage of (commonly) Petit Verdot or Cabernet Franc, is the perfect balancing act â€“ the two grape varietals cancel out each others weaker points, and accentuate all that is good about the other.

Medium to deep garnet-purple in color, the 2016 Dassault gives up notions of crushed red and black currants, black berries and warm plums plus suggestions of cedar chest, yeast extract and garrigue. Medium-bodied, the palate is vibrant and refreshing with a soft texture and loads of long-lingering black and red fruits on the finish.

This is sleek and refined, with a beautiful feel to the waves of cassis, dark plum and fig fruit flavors that glide through, inlaid seamlessly with black tea, dried anise and tobacco nuances. The 2016 Dassault is a gorgeous wine. Plush, deep and beautifully resonant, the 2016 has so much to offer. A whole range of raspberry jam, cedar, espresso and white chocolate notes develop as this plush, modern Saint-Émilion shows everything it's got. I would give the 2016 a few years in bottle to allow the tannins to soften. There is so much to like and admire here. Tasted two times.
