91-93 The 2021 Dassault is very, very good. Dark and ample, the 2021 possesses terrific depth and fine balance at this stage. Inky dark fruit, chocolate, licorice, mint, spice, tobacco and mocha are nicely pushed forward. This succulent yet mid-weight Saint-Émilion has a ton to offer.

There are few regions in the world with stricter regulations in regards to wine production and grape varietals than those found in Bordeaux, France. Here, in the home of the world's finest wines, the type and quality of grapes used is of utmost importance, and the legendary wineries which work on the banks of the Gironde river have mastered the careful art of juice blending to find the perfect balance for their produce. Whilst there are six 'official' Bordeaux grapes, the two key varietals for almost every fine Bordeaux wine are Cabernet Sauvignon and Merlot, and with good reason. Whilst Cabernet Sauvignon grapes are renowned for their acidity and astringency, strong fruit and spice flavors and full body, Merlot grapes are notably rounded, soft, fleshy and lighter on tannin. The combination of these two varietals, along with a small percentage of (commonly) Petit Verdot or Cabernet Franc, is the perfect balancing act â€“ the two grape varietals cancel out each others weaker points, and accentuate all that is good about the other.

89-91 The 2021 Château Dassault is a rich, chocolaty, red and black-fruited effort with medium-bodied richness, ripe yet present tannins, good overall balance, and a good finish. It's another charming, nicely balanced 2021 that's going to drink nicely with just short-term bottle age.

A blend of 52% Merlot, 27% Cabernet Franc, and 21% Cabernet Sauvignon, the 2021 Dassault is deep garnet-purple in color. It storms out with powerful notes of cassis and black cherries, followed by subtle touches of bay leaves, lavender, and black pepper. Medium-bodied, the palate has a fine-grained texture and soft acidity, with a great core of fruit and a peppery finish.

Dark blackcurrant chocolates on the nose. Juicy and quite vibrant on the palate, more life and energy than some, though the fruit density remains on the lighter more elegant side with tension and focus. I like the raspberry and strawberry flavour with slate edged tannins that give this a real mineral and saline ending. A little stalky at the end though well presented with potential.
