Varietal

Red Bordeaux

There are few regions in the world with stricter regulations in regards to wine production and grape varietals than those found in Bordeaux, France. Here, in the home of the world's finest wines, the type and quality of grapes used is of utmost importance, and the legendary wineries which work on the banks of the Gironde river have mastered the careful art of juice blending to find the perfect balance for their produce. Whilst there are six 'official' Bordeaux grapes, the two key varietals for almost every fine Bordeaux wine are Cabernet Sauvignon and Merlot, and with good reason. Whilst Cabernet Sauvignon grapes are renowned for their acidity and astringency, strong fruit and spice flavors and full body, Merlot grapes are notably rounded, soft, fleshy and lighter on tannin. The combination of these two varietals, along with a small percentage of (commonly) Petit Verdot or Cabernet Franc, is the perfect balancing act – the two grape varietals cancel out each others weaker points, and accentuate all that is good about the other.

Red wines from Graves are predominantly blends of Cabernet Sauvignon and Merlot, offering a balanced expression of dark fruits, structure, and age-worthy potential. The appellation is also celebrated for its exceptional white wines, primarily crafted from Sauvignon Blanc and Sémillon. Tobacco, blackcurrant and crushed stone. Ash, too. Full-bodied with very polished and juicy tannins that are firm, yet polished and long. Wonderful finish. Give it three or four years to come together. Try after 2025.

The 2019 Olivier is a dark, potent wine. Inky blue and black fruit, gravel, smoke, licorice, cured meat, graphite and savory herbs infuse the 2019 with striking aromatic intensity to play off its sumptuous fruit. There is a lot going on here. Very good.

Expressive nose of bright red cherries and strawberries. Good juiciness here, this has life for sure but the fruit is still a little in high definition right now and edged with spicy oak elements that are quite dominant. Definitely lots going on and this has power, precision, good fruit and acidity but needs more time to soften and integrate. A peppery, quite savoury finish. Drinking Window 2024 - 2039.

Blackcurrants, darker cherries, earth, and spicy oak notes all emerge from the 2019 Château Olivier, a young, unevolved, promising 2019 with medium to full body, ripe, nicely polished tannins, the vintage's elegant style, and a great finish. Give it 2-4 years and enjoy over the following 10-15.

Wine Advocate

Aromas of red berries and plums, framed by hints of burning embers and a deft framing of new oak, introduce the 2019 Olivier, a medium to full-bodied, supple and charming wine that's elegantly fleshy, with an ample core of fruit, powdery tannins and lively acids, concluding with a discreetly heady finish.

The Wine Independent

The 2019 Olivier Rouge is a blend of 55% Cabernet Sauvignon, 41% Merlot and 4% Petit Verdot. Deep garnet-purple in color, it features notes of redcurrants, juicy blackberries, and mossy tree bark with hints of crushed rocks and forest floor. The medium to full-bodied palate is plush and vibrant with lovely red and black fruit layers and a lifted finish.

Sleek, showing inviting cassis and plum puree notes, with black licorice accents and a hint of singed cedar at the very end. Cabernet Sauvignon, Merlot and Petit Verdot. Drink now through 2026. Tasted twice, with consistent notes. 10,000 cases made.
