Based on the 2017 vintage and disgorged in November 2022 with a dosage of 22 grams per liter, the latest release of Selosse’s NV Exquise Sec shows even better with additional post-disgorgement aging, unfurling in the glass with aromas of candied citrus peel, roasted sesame, candied pear and almond paste mingled with toasted bread. Full-bodied and concentrated, muscular and enveloping, it possesses a sweet, rich core of fruit. As I have written previously, while this is not a wine for every occasion or palate in an era when low-dosage Champagnes are the order of the day, it pays homage to a bygone style, all the while retaining the imprint of Selosse’s methods. The wine derives from two parcels in Oger, Pierre Vaudon and Les Basses d’Hymen, both situated at the foot of the slope and characterized by clay-rich soils.

Varietal Champagne Blend

The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

Region Champagne

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

The NV Demi-Sec Exquise (base 2017) is a selection from the lower slopes of Oger, where soils are rich in clay and where fruit ripens earlier. It was bottled with 22 grams of dosage. In its newest incarnation, Exquise now spends at least four years in the cellar prior to release to help integrate the higher dosage. Rich layers of citrus mingle with scents of chamomile, marzipan and dried flowers, filling out the layers effortlessly. This most recent edition of Exquise will be finished with a retro label.
