Rated 93 – Like Les Fourneaux, these are old vines averaging 56 years of age, with the first vines planted just after the war in 1945. There is a good amount of clay here, making a Vaillons with more guts and girth. It is generously sappy yet refined in structure thanks to seamlessly lifting acidity and a lightly drying tug on the finish. White pepper, lemon peel, plumcots and fresh herbs build momentum through the long finish. – Tim Atkin
