Varietal: Cabernet Sauvignon
There is little doubt about the fact that the most familiar red wine grape varietal in the world is the Cabernet Sauvignon grape, seen listed on bottles from more or less every single wine producing country across the globe. Part of the reason for this is the fact that Cabernet Sauvignon is a particularly hardy grape, resistant to both frost and rot, and can grow well in a number of climatic conditions so long as it receives enough sunlight and water. Of course, this is only half the story – we cannot ignore the fact that wines made from the Cabernet Sauvignon varietal are prized not only for their strong acidic fruit flavors, spicy and earthy notes and high tannin content, but also for the fact that they age beautifully in oak, resulting in wines which are on another level from those made from lesser grapes. Aged wines made using primarily Cabernet Sauvignon grapes are widely recognized to be the finest in the world. The aging process rounds out the tannins, softens the acidity and allows a wide range of fascinating and complex flavors and aromas to come through, making them an unquestioned highlight of the red wine world.

It isn't difficult to see how California became one of the world's most important, successful and influential wine regions. For three hundred years now, the United States has been leading the New World in wine production, both in regards to quantity and quality. Indeed, as much as eighty-nine percent of all wines to come out of the United States are produced in California, where the fertile soils and sloping mountain sides, coupled with the long, hot summers provide ideal conditions for producing high quality, European style red, white and rosé wines. With over a million acres of the country under vine, the United States sits comfortably as the fourth largest wine producer in the world, where imported grape varietals from all over the Old World are processed using a successful blend of traditional and contemporary techniques.
Appellation: Sonoma Valley
California's beautiful and remarkably fertile Sonoma Valley has grown over the decades to become one of the United States' most respected and profitable wine regions, with wineries within the region benefiting from the superb Californian sunshine, low rainfall and wonderfully rich soils. Because of this vital combination of excellent conditions, the region is able to grow a wide range of grape varietals for use in the production of an impressive array of wines, with many different red and white wine grapes flourishing each year and producing excellent and characterful results. The soils have been enriched by volcanic activity, and the presence of geothermal springs, which make this region a unique one, and very much the beating heart of California's ever growing wine industry.
